Turtle Candy Topping for Biscotti

Turtles candies come in all shapes, sizes and recipes, with some traditionally shaped like a turtle, as the name suggests, but many of the best recipes take on a shape of their own.

Rosanne LeBlanc knows how to take her biscotti making to yet another delicious level. While enjoying a chocolate turtle candy one day, she thought why not adorn her signature biscottis with turtle topping and create a fantastic cookie that any turtle lover would enjoy.

She shows us how to build the turtle on top of the biscotti beginning with a caramel log, then topping with whole nuts and sealing with a luscious layer of chocolate. Easy, delicious and crowd pleasing, these turtles are the perfect combination of cookie and candy.


Turtle Candy Topping for Biscotti

1 biscotti (flavor of your choice)

2 tablespoons caramel (malleable consistency)

1/4 c. Whole nuts: brazil nuts, pecans, hazelnuts, almonds and cashews

2-3 tablespoons melted chocolate


  1. With your hands, roll caramel into a log shape and press into place on biscotti.
  2. Press nuts into the caramel in any combination you wish.
  3. Coat the top of the caramel/nut mixture with melted chocolate, making sure to cover the caramel completely to avoid air pockets that will dry out the caramel.
  4. You now have a delightful, bumpy, home-made turtle biscotti!
